- Preheat the oven to 170 degrees Fahrenheit, or choose the lowest temperature setting your oven allows.
- Line a large 17×12-inch rimmed baking sheet with parchment paper or a silicone baking mat.
- Rinse the berries and remove any stems as necessary.
- Add the berries to a blender or food processor.
- Add the honey and lemon juice, then blend until the fruit mixture becomes smooth.
- For a smoother finish, push the puree through a fine mesh strainer to remove the seeds.
- Pour the fruit puree onto the prepared baking sheet and spread it into an even layer.
- Place the tray in the oven and dry the puree for 5-6 hours, rotating the pan halfway through. Remove it when the fruit has set and no longer feels sticky.
- Allow the pan to cool completely. If you used a silicone baking mat, gently peel the cooled fruit leather from it and transfer it to a large piece of wax paper.
- Cut the fruit leather, still resting on the wax paper, into long strips and roll each one.
- Store the finished fruit roll-ups in an airtight container for up to 2 weeks.
